JENNY’s FAVORITE— SHREDDED CARROTS
Kitchen staff thought Em was getting a little crazy with the carrot shredding when we found ourselves with 50 pounds of shredded carrots at the end of the season. The carrot cake we make is a big seller—- but that big?
Luckily, family discovered the stash and opted to put some to good use. Here’s our suggestions (compiled just this past winter!)
-Add to soups, stirfries & stews
-Thaw to make carrot cake, carrot fritters or in place of zucchini if you’re feeling adventurous!
