RHUBARB


PIE COMBINE 3 cups rhubarb, 3 cups strawberries, 1 cup sugar, ¼ c. cornstarch, 1 tsp. cinnamon, 1 tbsp. lemon zest if desired.  Pour into pie crust.  BAKE at 400 F  for about 1 hour.

DESSERT IN A HURRY… aka CRISP! Use pie filling & sprinkle with: ¼ c. brown sugar 1/3 c. flour 1/3 c. oats, ½ c. butter.  Bake at 375 F for 45-60 minutes.

A FAST MEAL  ROAST [@400F for 20 min.]  When cool add spinach, balsamic dressing, strawberries & feta

 SUMMER DRINK MIX-IN! ROAST (follow similar technique as above) with honey [1/4 c. honey to 2 cups rhubarb]  When finished roasting & cool, add about 2 quarts of your favorite “bubbly”!
